S’more S’mores




Camping season is finally here again, well for some of us, for those of you still stuck in way to much snow to do anything with, you have my sympathies. But for the rest of us coming into spring it is a great time to get out your tents, go find a spot and build a campfire.
One of nearly every American child’s favorite camping memories is roasting marshmallows over the fire, sticking them between two pieces of graham cracker with some chocolates. Now we have seen some pretty crazy things done with s’mores including many different candy bars being used to provide the chocolate, not to mentions last year’s post we did which including strawberry’s http://theforkandeasel.blogspot.com/2014/07/artisan-smores.html) However this year we are exploring a different twist on the s’more, and it is anything but classic.


We are going to start by getting rid of the graham crackers, throw out the chocolate, and yes we are even leaving behind the beloved marshmallow.  What left you ask, A concept, an idea to be built upon, the idea that at its heart a s’more is simply a sandwich, a sandwich where the main filling is something gooey, roasted over the campfire. Add to that a complementary flavor component and you have the basics of a s’more.
Now we are going to take this Idea and use it as a module to reconstruct our s’more. In place of a marshmallow we use cheese, (in this case cheese curds, though I suspect that miniature mozzarella balls will serve just as well (http://theforkandeasel.blogspot.com/2015/03/mozzarella.html)) you can roast it almost just like a marshmallow and the fire adds a great flavor and texture. Next we will swap out the chocolate for a piece of summer sausage, I have tried this both with the sausage roasted and unroasted and both are great. Put those between to wheat crackers of your choice, and there you have it a savory rendition of the s’more. My favorite part about these is that it gives you all the fun of making s’mores but without the sweetness which can sometimes be overwhelming, allowing you to enjoy this great family tradition any time of the day.
